Chablis gets its unique character from kimmeridgian clay - basically a speckling of fossilised sea shells that shimmers through the region's terroir. Chablis starts it's journey with oysters in the soil and should end with oysters on the palate.
Louis Jadot Chablis 2019 and Gilles e Natalie Fevre Chablis 2018 both show a fantastic entry point to the region and a fantastic vintage for Chablis. Louis Jadot Chablis Fourchaume 1er Cru 2016 shows the extra depth a complexity that is achieved at Premier Cru level, and an extra couple of years ageing (will go more if required). Patrick Piuze has been revolutionising Chablis production over the last 10 years. All by hand (most machine pick) Piuze will vinify 10 wines where most would do one.
