Pieter Walser conceived Blank Bottle as “an honest wine brand that had no limitations”. Anything is possible here: style of wine, region, and even grape varieties. In any given vintage, he might produce more than 40 individual cuvées, and he estimates that at any moment 50% of his output is a single bottling, never to be recreated - COMPLETE ONE OFFS.
Moment of Silence: Stunning, all rounder, there is nothing you can fault in this wine. Aromas of candied lemon, cooked apple and mango with a core of minerality. Soft and voluptuous, it has a lovely ripeness and a fleshy, creamy mouthfeel, which leads to a perfect tangy freshness giving some zip to its otherwise mellow feel.
Master of None: Pieter’s answer to Cru Beaujolais... super bright and juicy, bursting with wild strawberry, cherry and with an earthy, smoky undercurrent. Can be served slightly chilled... the perfect summer red.
Air Carrots of Pagnol: This wine from Blank Bottle is named after Pagnol, the author of Manon des Sources. It is a blend of Grenache Blanc from Wellington and Swartland, with a sprinkling of Grenache Gris. The backstory is as good as the packaging.
Oppie Koppie: 'Shiraz and Cinsault from the Voor-Paardeberg, Swartland and Breedekloof. Back in 2014 I was walking through an organically-farmed Shiraz vineyard in the Voor-Paardeberg. It was close to brunchtime, so I picked a bunch of grapes and stripped the berries off the stem. I was left with a clean stem. I then ate the stem. Pure pepper spice! It immediately triggered an idea: if I ferment the wine without removing the stems (a.k.a. whole bunch fermentation), chances were that I could possibly extract some of that exciting spice.'
