*** NOT FOR THE FAINT HEARTED. This is f&*king wacky. Made from Palomino, the grape that is used for Sherry, like Sherry it is aged under flor (or biologically, see below), meaning there are some pretty interesting flavours - think salty, olives, herbs and oysters.  If you have unruly facial hair and vague pronouns you will definitly love this, if you are more traditional then look elsewhere. NB: It's not a traditional type of match, but this is great with a dirty martini as a side car. Always drink responsibly.

Made in the Sanlucar de Barrameda region of Spain, most famous for manzanilla sherry, this stunning white comes from vineyards that are 80 to 90 years old,” says Bernardo. “Like manzanilla, it’s aged under flor, a thin layer of indiginous yeasts that protects the wine from air contact. The result is a wine with extraordinary depth and complexity, and it clocks in at only 10.5%. WINEMAG
