Cabernet Sauvignon is famous the world over for it's heavily structured, tannic wines that are given to long periods of age in oak. Cabernet produces some of the longest lived red wines in the world. Deep black and blue fruits, cedar, spice and cigar underpin the variety, and it is an ideal partner of steak, grilled meats and bold flavours - high tannic content is hugely favourable to match high protein content. Familie de Skalli Cabernet from the Languedoc is an entry level, approachable stye from the Languedoc, it has no astringent tannins & is a medium bodied. Stocco Cabernet Sauvignon is from Friuli in the North of Italy, and is full of really juicy, ripe fruit. It is matured in stainless steel for clarity, with a beautiful line of freshness. Bocanada 'Go Go' Cabernet Sauvignon adds a little bit more heft to proceedings, a new world example from high up in the Mendoza Valley, Argentina.
Moving to the classic, spiritual home of CS of Bordeaux: Haut Dambert is from the right bank of Bordeaux. The right back sees Cabernet as a minority of the blend. Dambert is made up of Merlot, Cabernet Franc and Cabernet Sauvignon. From the left Bank, where Cabernet is in the majority, Chateau Cissac Haut Medoc is a super-classic Claret (the old fashioned term for Left Bank Cabernet). Finishing in California, where Cabernet finds it's neo-classical expression, HOBO Cabernet Sauvignon is made by Kenny Likitaprakong and is from the Alexander Valley, lower alcohol it is named for the fact that the wine maker was one a rough sleeper on the beaches of Cali!
