This is cool. Spanish Cava. Made in a 'naturally petulant' (pet-nat which is the old method, single fermentation without sugar or yeast) fermentation takes place in clay jars. There is a slight haziness to the wine, it is yellowy gold in colour with very fine and integrated bubbles. It is a silky and dry with some lovely white flowers and citrus and tropical fruits. Dry and saline on the palate, it has a long finish. This is super complex but also super drinkable. I cant quite get my head around it, and thats before getting to the packaging. Its bottled under cork AND crown cap, comes in a black paper bag tied at the neck with straw. This actually won the WINE & CRISP MATCHING People's Choice award that we hosted on stage at the Wine and Cheese Festival in Iveagh Gardens in 2019 - it really has something for everyone. STSWine
