Sauv Blanc, particularly Marlborough Sauv is traditionally made to be drunk young. Mahi 'The Alias' is made more in the style of a Sancerre from the Loire. Fruit is all from a small single vineyard. The wine is savoury, complex and textural. Hand picked, and unusually for Sauv: wild ferment in barrel and aged in French oak barrels and bottle before release. Wine maker Brian Bicknell effectively pioneered and perfected this style at his previous post with the ionic Kiwi winery Seresin. STSWine
