The region of Valpolicella is famous for its massive red wines. Almost syrupy in nature, alcohol regularly reaches and surpasses 18%. The reason for this strength and viscosity is the appassimento process, whereby grapes are picked and laid out on mats in the sun to concentrate the sugars and flavours. Typically, the Romans came up with this genius way of making over the top wines. The better Valpols will exercise some restraint like this effort from Sopra Sasso, where the richness and body are supported by a nice line of acidity, making it less jammy. STSWine
