Giol Italy's oldest winery (est 1427), their 2 wines here Diol Perla & Giol Colfondo are both organic and unfiltered with only a light natural sparkle and racy, dry acidity. Drusian again leans towards the grape and the terroir rather than a Prosecco 'style' and their Colfondo is a return to tradional method sparkling, bottle fermented and not disgorged, it is cloudy. It is searingly dry and complex too. Bollamatta NV is a Pink Spumante made from the red grape Sangiovese. Made by Bibi Graetz, the mad Florentine artist turned wine maker, it features one of his original pieces on the label. Lastly from Spain, Loxarel A Pel Ancestral Pet Nat. Totally tyraditional and natural, made from Xarello, the altitude of the vineyard gives racy acidity, fermented in amphorae.
