80% Chardonnay and 20% Pinot Noir from vines of 50 years of age. 10 months in 228 litre oak barrels and a further 42 months on lees after bottles with less dosage than the NV. This is quite a step up. Again, you must forget the Champagne flute – the perfume is too sublime to limit. Showing plenty of primary fruit notes, the palate is quickly hit with several layers of developed character and minerality. This is the hallmark of what makes Vilmart so special; matching incredible depth and intensity with fresh acidity and the unmistakably clean and chalky Rilly-la Montagne terroir. The NV Grand Cellier (2015 base) is pure class. Creamy and exquisitely layered, the Grand Cellier remains light on its feet and vibrant. Orchard fruit, spice, pastry crust and white flowers build nicely in the glass in a Champagne of exquisite balance. This release is based on 2015, with 25% 2014 and 25% 2013 reserve wines.
