Cahors is ground zero for Malbec, known regionally as Cot. Traditionally unapproachable and harsh in youth (formerly known as the black wines of Cahors), the popularisation of Argentinan Malbec has forced/helped Cahors to modernise and they are now making some of the most compelling modern wines in all of France.
