Eleonore Moreau Chablis 2019

Eléonore Moreau Chablis comes from the small, picturesque village of Poilly-sur-Serein, located 15 minutes away from the the town of Chablis. Within this village, Eléonore is the only winemaker to commercialize and bottle her wine, and only a bit of it actually gets out for export. 

In the same spirit of Chablis Pérégrinations, this wine is an experimentation of a Petit Chablis harvested by hand, fermented with natural yeasts, and aged on the lees, made with every little human intervention (only SO2 added and clay used for fining). We have chosen a beautiful parcel of well-exposed Petit Chablis to extract complexity and nice minerality. ELEONORE MOREAU
